Original poster here. I've spent quite a bit of time trying to get to the bottom of this. I believe I have the answer. It appears that, at least for 2021 RS7 models, "aluminum race, anthracite inlays" were standard (which is what my car has, and which gives you the "carbon" look trim on the center console/around the shifter), but you could pay $500 extra to instead have "carbon twill structure inlays" which results in the gloss black trim on the center console/around the shifter. I believe I was just wrong in my original post when I referred to my trim as "twill." I've attached the window sticker of my RS7 and you'll see under the comfort/technology section as standard equipment "aluminum race, anthracite inlays." I disagree with one of the other posters that US models were only sold with the gloss black trim. It's still somewhat of a mystery to me, but I think I got it figured out. To illustrate, here are two Audi RS7s for sale here in the US with the same center console trim (aluminum race, anthracite inlays) as mine:
