I did the same to mine, swapped my 265/30/20 factory tires because they were too low profile for these NYC roads lol. I actually put on 275/35/20, went an extra size beefier just to have the cushion, I don't plan on lower the car or adding spacers so I wasn't worried about rubbing, although I will say if you do get 275/35 you want to stick to brands like Continental or Vredestein (I have this), as they run narrower sidewalls than other brands like Michelin which are more squared. So my clearance was just enough with this size, I rubbed a little bit on the inner fender liner but i was able to kind of nudge it out the way and fold it back sort of and it's not been an issue since. see my post here for info on that:

If you don't want to go that thick, then 275/30 will fit fine, it's just slightly more but it will also fill in more than the stock Conti 265/30, because like i mentioned Continental sidewalls run narrower than average so those 265/30 looks extra stretched, also being summer tires too, if you get all-seasons those should run a bit wider, so 275 is just 10mm more but it will fill in a lot more still, look at the stock RS5 wheel size for reference, it's 275/30/20 so you'll get that same fitment as that.
285/30/20 will fit the car, but it's a bit too wide for the stock wheels which are 9" wide, 275 is the most i'd go on those, 285 will look too bubbly and will affect handling i'd think. 285 you need at least 9.5-10" for a good fit.
so 275/30 would be the "stock" choice and will fit just fine. you could also even look into 255/35, that will be slightly thicker but not too thick, definitely wont rub or anything and it's a good size, the prices on 255/35/20 are much better too.
as for spacers, it will depend on the tire size you get. if you go with 275/30 then i would probably do 10mm front and 15mm rear, so you get a nicer fitment near flush, but wont rub or anything. if you get 255/35 then you can probably do 12-15mm front and 18-20mm rear.
