The difference is pretty small, either will work fine. If you use two identical oil formulations the 5w-30 may have a small benefit in the heat and a small loss of protection in the cold. The quality/formulation of the oil really matter more than such a small viscosity difference. A lower quality oil can shear and fail a lot faster causing it to thin out rapidly even if it's a higher viscosity to begin with. So while you might start with a 5w-30 it could rapidly become thinner than a 0w-20. This is where the lab testing comes in. It can tell you what your oil performance is like once it's been used.
