Have had a S6, RS7 and A6 TDI all facelift. Some of this is mentioned already.
Aside from the obvious 4 door hatch to traditional sedan, the starting pricing was around 10k difference which carries over to pre-owned prices. Won't mention rear headroom since you can read up on it, taller passengers in the back can be really close to the ceiling.
Body panels are all different. Underpinnings mostly the same, minor things like the rear trailing brace thing on the 7s the 6s don't have. I don't think the 7 came in 2.0 in the US?
Headlights
From loose observation, the 7s usually come with the higher tier headlights vs. several variations on the 6 (especially on facelift).
Taillights
No physical shape change between early and later models, 6 the shape and color are changed and not easily interchangeable.
7s have reported some dead leds on the upper brake light.
Doors
7s are frameless windows so glass dip on entry and exit.
7s weather stripping gets ugly over time, no leakage but ugly.
6 and 7 door cards and interior grabs are very different, switching between my 6 and 7 I miss the front window switches from muscle memory, 7 being further forward for front windows.
Dashboard
Not interchangeable, trim is different with the 7 having an upper trim piece matching the rest of the trim.
Center console
Length is different between them, 7 being slightly longer. Only noticed this because I have had both right next to each other.
Audio
All 7s have a sub in the tire well, 6s are generally on the rear deck
Options
Top view is not an option on the 7, mirrors are on the door shell not the triangle on the upper beltline.
7 hatch is always powered, 6 power trunk is an option.

S7 and RS7 are 4 seaters, I imagine the A7 competition interior is 4 seaters too but A7 in general is 5 seats and uses similar back seat hardware to the Avants.

Not really wider track when the half shafts are the same across the models, the body panel/wheel openings allow for lower offset by a little bit nothing big in the grand scheme but makes a difference to end users with offset options.
