So, after all is said and done, if anyone cares, the answer is yes..... The RS3 8piston calipers, brake lines, and carriers are a direct plug and play fit to the Audi S3/VW Golf R. The only issue is that the RS3 mount on the suspension hub is either 2mm farther out or the carrier is drilled 2mm further out. To allow the actual rotor to line up dead center in the caliper and function as designed there either needs to be a rotor hat with 2mm less backspace or carriers that are drilled out accordingly as well. So based on the direction I went with the upgraded two-piece RS3 Roters the path of least resistance or the less expensive option in my case was properly spacing the rotor hat to allow exact fitment in the caliper. A more expensive but solid and weight-saving option would be to go out and have an aluminum blank roof the caliper carrier milled out with the correctly distant bolt holes, to allow the caliper to line up on the stock rotor placement. This option would be amazing but I would need to get a min of 50 people willing to buy in to make it a more permanent and cost-effective option at some point. Either way for the RS3 parts I purchased, I picked up a set of 2mm wheel spacers with a 66.6mm center bore based on the hub ring being 66.6 at the base of the hub about an inch or so out, then 57.1mm for the rest. The spacers unfortunately all only came with 145mm outside diameter and the actual hub diameter is approximately 135.5mm. So I milled the outside diameter of the spacer down to 135.5 or so to fit inside of the rotor hat to fit and actually hold itself in on the hat spacing the rotor the 2mm further out, lining it up in the caliper perfectly. Once done and attached, you would never know it was modified. With that and the 10mm 57.1 hub centric spacers all around for the factory 19" wheels to clear the front calipers, it works perfectly as well give the tire and wheel an amazing stance in the wheel well. Feel free to ask any questions. For me, the cost involved, weight savings, and the braking improvement are well worth the effort and factory look.
