As others have commented, all of the additional warranties and coverage is extra and negotiable. I don't think Audi Care is negotiable, per se, as it is a nationwide dealer program that just covers regular maintenance visits and saves the owner money by paying in advance.
I don't always have my car serviced at my Audi dealership, so I passed on the Audi Care. Don't live in Canada but I doubt that it is free as stated above.
Over coverage is really personal but I did choose the rim/tire warranty which unfortunately was bundled with windshield and key loss. I was told that I could not buy the coverage without windshield and key loss but maybe that is someone you can investigate prior to sitting down to sign all of the paperwork. I spec'ed my car with the 21 inch rims and purchased OEM 22's with summer tires from a friend of mine. The rim and tire will cover both sets of tires and rims but coverage on aftermarket rims is a gray area. I would have passed on this coverage if I was buying aftermarket 22's.
Extended warranty beyond the original Audi coverage can be purchased at any time before the new car warranty runs out but becomes progressively expensive as that day draws closer. I am leasing my car and planning to buy the vehicle out at the end of the term but who knows if I will actually keep it. Personally, I would wait on buying the additional coverage because until you really drive the car and live with it day to day, perhaps you will decide not to keep it longterm.
One word of caution, whatever rim and tire coverage you choose, I strongly recommend one that your dealership is selling. I have had some issues with third party insurance that was sold to me by the selling dealership but not at the dealership that I service my vehicles, which were different locations and did not involve Audis.
I also agree that if I purchase the extended warranty, I would only purchase the Audi Platinum warranty because the third part warranties have way too much fine print.
