From my understanding, Service Position is simply a term Audi/Enthusiasts used to allow more space to service the front of the engine and components that are typically harder to access - remove the front bumper and radiator support, viola, Service Mode/Position.

The only MMI "Service Position", is the "Air Suspension Mode" aka "Tire Change Mode" within the Service and Checks section of the MMI - essentially locks out the air suspension so it doesn't max it out when changing a tire and/or jacking up the car

Follow this ECS tuning video it's a DIY for the SC pulley but the beginning is putting the car into service position. It's a B8 S4, but is the same for most all Audi service position procedures.
