custom work there is a guy south of lancaster. PM wet willy (andrew) he can give you the info.
second place is Gehmans Exhaust in Bowmansville (east of ephrata/denver area).. Gehmans has done the last 2 of my exhausts. They will use SS if you ask them to, bends are always kept up out of the way (my cars are low) but the quality of work is there.. fits great, looks good, its all straight, etc.
third place is Red Run.. i've had 1 exhaust done there and wont go back. Rear muffler wasnt straight and they stitch welded it into place crooked so i couldnt straighten it. the piping was hung really low and was told it cant go any higher.. i also had 1/4-3/8" gaps in my welds on the top side of each weld down the entire exhaust where they didnt get the top of the join.
Red Run also refused to do my downpipe and told me nothing bigger then stock would fit. Gehmans built my downpipe back using 2.5" stainless and including all flanges and gaskets for 138 bucks, I supplied the muffler.
I was waiting for someone to mention Gehmans. My brother got his exhaust done on his 87 F-250 there for dirt cheap and the quality seemed pretty good. The only thing that held me back from going there was I wasn't sure how much experience they had in doing custom work, as opposed to OEM repair. Also, being that I'm a good hour and a half away from them, I'm unable to make it down there during the week (they aren't open on the weekends). I called them and they told me I could drop it off on the weekend, but I'd really like to be able to be there in person beforehand to explain what exactly I want done. Glad to hear you are happy with the results though, as thats probably where I will end up going.
As for what exactly I need done, just some stainless steel 2.5" dual tubing from my downpipes back. I already have a muffler and tips, so all I really need is the dual 2.5" piping connecting the components. Nothing fancy.
