Is this something I can VAG out or is the switch not compatable?
Ok i had the same problem and everyone said it couldn't be done which is technically true but there is a work around. I replaced mine because it was peeling as well so really the only thing your concerned about is the front plate section. I don't have pictures but i will try to explain what needs to be done to get your fogs to work because yes it will not work with the current setup your trying to run. Basically this is what you need to do:
Sit down in a comfy chair and prepare to get frustrasted because it's kind of trial and error process.
First you need to remove the front plate from your new B7 headlight switch. This is the piece that is in good condition and not peeling the reason for buying the new switch.
Next you need to remove the front plate from the old B6 headlight switch. The piece that is peeling and looks like shit.
Swap the new b7 pretty none peeling front plate onto the old b6 headlight switch backing.
The auto function will now turn on your daylights if you move the switch down one more position it will turn on the headlights if you pull out the switch in that position it will turn on the fogs and then can be pulled out further for the rear just like with your old switch (well technically your still using your old switch just a different front plate).
Everything lights up and looks perfect that only thing that is slightly misleading is the "Auto" function which really only turns on the day running lights you don't have the real auto function.
Now obviously the steps where you remove the front plate from the new switch and place it on the old b6 backing is a little more complicated then what i described above but i had no DIY and sat down and looked at the thing for about half an hour and figured it out. You need to put a little muscle into it and don't be afraid to break the piece it's pretty strong.
