Looking to upgrade from my A4 1.8T to a used S4. Looking to spend $30k ish. See many 2.0T and 3.0T in my price range. In the groups opinion, which is the better (quicker, easily moded) reliable?

I'm not aware of an S4 that uses a 2.0T engine. So, if you are looking at a car with a 2.0T engine, it is not an S4.
The B7 S4 (2007) had a 4.2 liter V8. The B8 S4 (2010) used a 3 liter V6 (3.0T) that was supercharged, the B8.5 (2013) also used 3.0T (supercharged). The B9 (2017) moved to 3.0T (turbocharged). You can tune any of these, and many after-market products exist from engine to exhaust to suspension. Personally, I would stay with the B8.5 or above just because a lot of stuff was upgraded over the B8. The transmissions are also different. B8.5 and below have a 7 speed DSG and the B9 uses an 8 speed ZF automatic. Personally, I prefer the DG as it is more direct and responsive, but the ZF is also popular.
Just make sure you don't buy a 2.0T S4. They don't exist.

Thank you for your input. I was also looking at S6's and they have to 2T and 3T engines. I was just wondering which one was better.
